Bananas….chocolate….pie! What a great combination. Something I could make that everyone would like. I adapted this recipe from The Nourishing Gourmet‘s recipe.
However I used the same crust that I used before for my Gluten Free Mini Fruit Cheesecake recipe.
- 1 cup of almond flour/meal
- 1/4 cup of Wholesome Sweeteners Organic Sugar
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 1/4 cup melted organic butter
- 5 organic bananas, mashed
- 1 cup of full fat organic coconut milk
- 1/2 cup of cocoa powder
- 1 tsp Simply Organic Vanilla Extract
Preheat oven to 350 degrees. Grease pie plate. Combine crust ingredients in bottom of glass pie pan. Wet hands and push to form crust bottom and sides. Place in oven and cook for 10 minutes. Remove and let cool.
In a mixing bowl, combine filling ingredients and whip until fluffy and fairly smooth.
Pour filling mixture into cooled crust and place in freezer to until well set, for a minimum of 4 hours.
Remove pie from freezer some time before serving to soft up slightly. Use a sharp knife to cut into slices. Garnish with shaved chocolate.
